Gold Plum Dried Shitake Mushrooms (whole) 100g

To Rehydrate and soften dried Shiitake mushrooms clean the mushrooms gently removing any dirt. Then gently soak them stem down in lukewarm water for at least 1 hour. After softening cut stems and drain excess water before use [tip: mushrooms may float to top and so you may need something on top just to keep them submerged.]

The leftover water can be reused in a mushroom stock or similar as the flavour of shiitake will have been infused during rehydrating. You can also grind dried mushrooms with a food processor and use the mushroom powder to flavour sauces and stews
